The RATIONAL iCombi Pro ICP10-FULL E is a full-size commercial electric combination oven designed to perform convection cooking, steaming, and combined hot-air-and-steam cooking in one intelligent appliance.
This model accommodates up to ten 18" × 26" full-size sheet pans, twenty 12" × 20" steam-table pans, or ten 2/1 GN pans. It is designed for high-volume restaurants, hotels, bakeries, catering kitchens, commissaries, hospitals, schools, banquet facilities, and institutional foodservice operations.
The iCombi Pro uses RATIONAL’s intelligent cooking technology to monitor cabinet conditions and automatically adjust temperature, moisture, airflow, and cooking time. It can compensate for differences in product load, food temperature, door openings, and desired browning to help produce repeatable results with less manual supervision.
Its boiler-based steam generator produces fresh steam for vegetables, seafood, rice, pasta, baked goods, meats, and other moisture-sensitive foods. The oven can also roast, bake, grill, regenerate, proof, poach, braise, and perform low-temperature or sous-vide cooking.
