Description
The TurboChef Sota, model NGO, is a compact commercial high-speed oven designed to cook, toast, brown, crisp, and reheat food much faster than a conventional convection oven.
The system combines top-launched microwave energy with independently controlled upper and lower impinged airflow. The microwave system heats the food internally while the high-velocity heated air browns and crisps the exterior, producing fast and repeatable results.
The Sota NGO’s internal catalytic filtration system permits ventless operation for many approved menu items, subject to local regulations and the type of food being cooked. TurboChef documentation states that fatty raw proteins may require additional ventilation review.
